Ulfrid’s Sausage Rolls

Ingredients:
6-8 bratwurts or similar sausage, cut in half to make 12-16 short sausages
2 ¼ tsp. yeast
1 c. warm water
1 tbsp. sugar
1 tsp. salt
2 tbsp. oil
2 ½ c. flour (white or whole wheat)
1 c. grated cheese
1 c. diced onion

Directions:

Place water in a large bowl, add yeast and stir gently to dissolve. Stir in remaining ingredients, beat with a wooden spoon until soft dough forms. Let rest five minutes, turn out onto a well-floured surface, roll flat.

Cut dough into triangles about four inches wide at the widest point, and six to eight inches long. Place a piece of sausage at the wide end, sprinkle with onion, and then roll it up. Continue until all the sausages have been used.

Place on a greased cookie sheet two inches apart. Sprinkle with grated cheese. Allow to raise 20 minutes, while oven heats to 425. Bake for 20 minutes, or until rolls are golden and cheese is bubbly.

 

Citatian Almond Pastries

Ingredients:
½ tbsp. yeast
1/4 c. warm water
2 1/4 c. flour
1/4 c. sugar
½ tsp. salt
½ c. butter, softened
3 eggs
4 oz. almond paste
1/4 c. butter, softened
1/2 c. brown sugar
¼ c. chopped almonds, toasted

Directions:

In a large mixing bowl, dissolve yeast in warm water. Add 2 c. flour, sugar, salt, ½ c. butter, and eggs, beating on low speed until blended. Scrape bowl, beat on medium speed 4 minutes. Add remaining flour and beat on low speed until well mixed. Cover dough and let rise until double. Punch dough, cover, and chill 2 hours.

While dough chills, mix filling:
Combine almond paste, butter, brown sugar, and almonds in a small bowl and blend well. (To toast almonds, place on a baking sheet and toast in a 350 degree oven for 5-8 minutes.)

Punch down dough, place on a well-floured surface and roll into a rectangle. Spread dough with filling. It will be crumbly, using your hands is best. Fold dough in half length-wise, cut into 1 inch strips horizontally. Twist strips like a rope, place on greased cookie sheet. Cover and let rise 15 minutes, while oven heats to 350. Bake for 15 minutes, or until golden brown.
